Skin-Contact Sauvignon Blanc in Amphora
Sauvignon blanc from Stella Maris vineyard in the Applegate Valley ripens to a level that is rarely seen in this varietal! We fermented a portion of this whole cluster for two weeks, while the other portion fermented on skins in amphorae for 4 months. The combination exhibits waxy tropical fruit characters and spice, with plenty of structure. Bottled with minimal SO2 and no fining or filtration.
