2015 Grüner Veltliner Vitae Springs 1.5L
When we make Grüner, we always macerate a portion whole cluster. For Vitae Springs, we macerated only 50% of the fruit whole cluster to help balance the ample fruit flavors that this vineyard gives. After 48 hours, the grapes are pressed and the juice transferred to 500L Austrian oak puncheons for fermentation and aging. The wine was bottled, unfined and unfiltered, after eight months of aging on fine lees.
