2015 SM2 1.5L
SM2 is a co-fermentation of Viognier and Sauvignon Blanc from the Stella Maris Vineyard in the Applegate Valley (Southern Oregon). Both the Viognier and Sauvignon Blanc were harvested on the same day. The Sauvignon remained whole cluster and we de-stemmed the Viognier right on top so everything could macerate together for 4 days. After pressing, the juice was transferred to 600L Acacia wood casks to ferment and age for 10 months before being bottled, unfined and unfiltered.
