2015 Grenache Soloro Vineyard 1.5L
The Grenache was fermented slowly for forty days at temperatures in the upper 70s (F) to preserve the floral aromatics that we love from this vineyard. Aging was in 500L puncheon to slow down oxygen exchange and minimize the impact of wood on the delicate flavors we see in this wine. 44ppm SO2 was added after malo-lactic fermentation to help preserve the youthful aromatics. After 6 months in barrel, the wine was bottled without fining or filtration.
