Pinot "Gouges" is a white skinned mutation of Pinot Noir, confirmed genetically different enough by DNA testing to be classified as its own cultivar. 75% of the fruit was pressed whole cluster after 48 hours maceration, while the other 25% was harvested later and de-stemmed, then added to the barrels of already fermenting juice. The wine was aged on skins for 100 days, then for another 3 months after racking off of skins, for a total of 7 months aging in Chestnut barriques.
