2017 Origin Sauvignon Blanc-Chardonnay

A co-fermentation of chardonnay and sauvignon blanc, we de-stemmed the chardonnay berries into open-top fermenters and then pressed the sauvignon blanc juice right on top. This fermented at cool temperatures for about two weeks, with regular cap management, then was pressed and aged in neutral oak. In this instance, the whole is indeed greater than the sum of its parts.
